- Making a lemon bread is an easy process, that is great way to include little ones.
- If you do have little ones helping you out in the kitchen for this recipe, you can add sprinkles to the batter such as we did here in the picture below.
- Use a standard size loaf pan such as this favorite of mine or you can use two smaller loaf pans.
- Remember to spray the pan with a non stick baking spray such as this one or butter and flour the pan.
- If you prefer a more white creamy glaze, sub the sugar for the glaze for powder sugar.
- For a sweet gift for a friend or neighbor, warp this loaf in clear plastic wrap once cooled and iced then wrap around a cute tea towel tied with string or a ribbon. Include box of tea with a note!

- Flour
- Sugar
- Salt
- Baking Powder
- Eggs
- Coconut Oil
- Milk
- Grated Lemon Peel
- Lemon Juice
Bottled or Fresh Lemon Juice?
Bottled lemon juice is not the same as fresh lemon juice but in a pinch it will work just fine here. You may need to adjust the sugar amount if the bottle juice is a bit more tart or bitter.

Step 1: Gather all the ingredients and preheat the oven to 350 degrees Fahrenheit. In a large bowl stir together flour, sugar, baking powder, and salt.
Step 2: In a small bowl beat the eggs with milk and oil. Add in the grated lemon peel.
Step 3: Next add the liquid mixture to the dry ingredients. Mix well.
Step 4: Pour into a well greased and floured loaf pan.
Step 5: Bake at 350 degrees Fahrenheit for 40-45 minutes or until a tooth pick inserted into the center comes out clean.
Step 6: Once baked, use the tooth pick to poke small holes into the top of the loaf and remove the loaf from the pan after it has cooled slightly.
Step 7: To make the glaze, mix together 6 ½ tablespoons of lemon juice with ⅔ cup of sugar. Stir until the sugar dissolves. Add more juice if desired.
Step 8: Pour the glaze over the loaf and allow to settle before serving.
