The process to make a scone is straight forward with just a bit of flour, baking powder and salt then cut in good quality butter. From there you can mix in any combination of flavor combinations!

- Use good quality salted butter that is cubed and ideally frozen or very cold. This will great the layers in your scone.
- I will cube the butter and then pop it into the freezer for about 10-15 minutes before using it in the recipe.
- If I do not use frozen butter, I place the prepared scones into the freezer for about 15-20 minutes before baking.
- Any chocolate will work but, I prefer using dark chocolate chunks to contrast the bright red and sweetness of the berries.
- Chocolate chips will also work just fine in this recipe.
- Don't skip the last step of brushing the scones with milk or cream and sprinkling sugar to the tops.

Can I Use Frozen Strawberries?
In this recipe, I used fresh strawberries as there is less juice than in frozen berries. If you use frozen berries, be sure they are are pre-chopped and toss them in about tablespoon or so of arrowroot starch before mixing them into the batter to prevent too much moisture in the dough.
Why Is The Dough Too Crumbly?
If your dough becomes too crumbly after mixing in the butter and liquids into the flour, you can a bit more milk until the dough starts to come together. The dough should not be too sticky. If it is too sticky add in a bit more flour.
Does The Butter Need To Be Frozen?
Ideally, the butter needs to be frozen or very cold to great the best shaped scones and layers within the scones itself. At the very least, place the prepared scones into the freezer before baking for about 20 minutes if you are using just cold butter.

Step 1: Preheat the oven to 375 degrees Fahrenheit.
Step 2: In a large bow, mix together the flour, baking soda, baking powder, and salt. Set aside.
Step 3: Cube the butter into small pieces and toss into the flour mix. Using a fork or two knifes, or better yet your hands crumble the butter into the flour until it is a sandy pebble size mixtures. Set aside.
Step 4: In a smaller bowl, combine the buttermilk, egg, vanilla and sugar. Mix together and set aside.
Step 5: Chop up strawberries into halve or quarter pieces.
Step 6: Pour the buttermilk mixture over the flour and butter. Combine with a spoon or your hands until it comes together. Then fold in the strawberries and chocolate.
Step 7: Once the dough easy to work with into a shape (you may need to add a bit more flour if too sticky) divide into two balls and flatten each into a small circle about ¼-1/2 inch thick.
Step 8: Cut into triangles and place onto a banking tray or pan lined with parchment paper. At this point place the prepared scones into the freezer for about 20 minutes.
Step 9: Bring the scones out of the freezer and brush them with the milk or cream and sprinkle sugar over the top.
Step 10: Bake until golden for about 20-25 minutes.
