A berry crisp with lavender with its sweet and slightly tart berry mess on the inside lingering with just a hint of floral from the lavender, mixed with the crunchy butter top, is Summer's comfort food. It celebrates the bounty of Summer but feels like a warm and familiar hug.
This crisp uses three different berries, strawberries, raspberries, and blueberries which all compliment the hint of lavender. The lavender just melts into the juices of the berries and bakes into the crisp. Just enough to remind you of being in a warm summer field surrounded by berry blossoms and wildflowers. It only takes less than 10 minutes to make and then place this crisp in the oven for a wonderful summer eve's dessert!
Cozy Tips for Berry Crisp with Lavender
- You can purchase lavender at a health foods store or specialty shop, but I get mine from Amazon, such as this one.
- Let your butter sit out for a bit beforehand so that it is easier to work with in the topping of the crisp.
- Make the crisp ahead of time and then once you are eating dinner, pop it into the oven and it will be ready shortly after you are done with dinner.
- Make this a fun Summer dessert by serving it with fresh homemade whipped cream or ice cream!

Which Berries Can I Use?
You can really use any berries you would like for this crisp. I have found using a mix is the most delicious and vibrant. Strawberries, blueberries, and raspberries work well with lavender. However, you could substitute cherries or blackberries if you would like or have them on hand. Fresh berries are great to use but you can use frozen berries and just increase the flour in the berry mix to a tablespoon.
Why Lavender?
Lavender is such an underrated herb and can be used just like any dried herb. It adds a nice floral flavor that when used appropriately it is very complementary and not overpowering. I use a dried organic edible lavender such as this one. You can even use lavender in other recipes such as my lavender simple syrup and lavender honey latte!
The Cozy Details
Step 1: Gather all of your ingredients and wash the berries. Cut the strawberries in half or in quarters depending on the size.
Step 2: Place all of the strawberries, raspberries, and blueberries into a bowl. Next sprinkle in the lavender, brown sugar and vanilla. Mix together and then drizzle on the honey.
Step 3: Place the berries into a lightly greased baking dish. Love this one!
Step 4: Begin to make your topping of the crisp, by cutting the butter into cubes.
Step 5: Next, mix together the flour, oats, and cinnamon. Toss in the cubes of butter and with you hands mixed together until the mixture is coated with the butter. It will start to resemble a moist sand texture and clump together when you squeeze it.
Step 6: Place the topping over the berry mixture.
Step 7: Bake in the oven at 350 degrees for about 30-40 minutes until the berry juice bubbles up onto the topping a bit and the topping is golden brown.
Enjoy immediately or allow to cool slightly!
This makes a great summer dessert with a simple pasta with zucchini, Italian sausage and fresh mozzarella or with creamy Tuscan chicken!
